  • 2 tablespoons (1 packet) dry ranch seasoning mix
  • 2 teaspoons pepper
  • ½ cup (120 g) ranch dressing
  • ½ cup (116 g) mayonnaise
  • 3 tablespoons (60 g) apple cider vinegar
  • ¼ teaspoon black pepper
  • 1 small red onion
  • 2 medium jalapeno peppers
  • 1 cup sharp cheddar cheese

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed red potatoes with olive oil, ranch seasoning mix, and pepper on a baking sheet. Roast for about 45 minutes until golden and crispy.
  2. While potatoes are roasting, mix ranch dressing, mayonnaise, apple cider vinegar, and black pepper in a bowl.
  3. Once the potatoes have cooled slightly, combine them in a large bowl with diced onion, jalapenos, and shredded cheese. Pour in the dressing and gently fold to combine.
