  • 1/2 cup unsalted butter
  • 2 cups all-purpose flour (or gluten-free blend)
  • 3 tablespoons cane sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup canned pumpkin puree
  • 2 cups almond milk (or dairy milk)
  • 4 large eggs
  • 8 ounces mascarpone cheese
  • 1 cup powdered sugar

Instructions

  1. Melt the butter in a saucepan until golden brown. Let cool.
  2. In a blender, combine flour, sugar, cinnamon, pumpkin puree, almond milk, eggs, and vanilla; blend until smooth. Add cooled butter and blend again.
  3. Heat a nonstick skillet over medium heat; pour batter to thinly cover the surface. Cook until bubbles form; flip and cook for another 30 seconds.
  4. In a bowl, mix mascarpone with almond milk and powdered sugar until smooth.
  5. Spread filling on each crepe, fold or roll them up, and serve warm.
