- 4 medium potatoes, grated and drained
- 3 fresh eggs
- 4 tablespoons all-purpose flour
- Sea salt and freshly ground black pepper
- 6 ripe tomatoes, diced
- 150g fresh mozzarella cheese, shredded
- Fresh dill, chopped
- Olive oil for cooking
Instructions
- Grate the onion and potatoes into a mixing bowl. Add eggs, salt, pepper, and flour; mix well.
- Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the mixture onto the pan; cook until golden brown (about 2 minutes per side).
- Preheat the oven to 200°C (400°F). In another bowl, combine diced tomatoes, dill, and half of the mozzarella.
- Place cooked pancakes in an oven-safe dish; top with tomato mixture and remaining mozzarella. Bake for about 15 minutes until bubbly.
- Allow to cool slightly before serving warm with extra dill on top.
