- 1/2 cup packed brown sugar
- 1 tsp vanilla extract (pure)
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 3–4 cups powdered sugar (sifted)
- 1 1/2 tsp vanilla extract (pure)
- 1/8 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix softened cream cheese and granulated sugar until smooth. Add egg yolk and vanilla extract; set aside.
- Whisk together flour, baking soda, salt, and spices in a large bowl.
- In another bowl, combine sugars, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
- Gently fold dry ingredients into wet ingredients until just combined.
- Fill muffin liners halfway with batter, add a spoonful of cream cheese filling in the center, then top with more batter.
- Bake for 18–22 minutes or until a toothpick inserted into the muffin part comes out clean.
