  • 1/4 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla extract (pure)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 34 cups powdered sugar (sifted)
  • 1 1/2 tsp vanilla extract (pure)
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix softened cream cheese and granulated sugar until smooth. Add egg yolk and vanilla extract; set aside.
  3. Whisk together flour, baking soda, salt, and spices in a large bowl.
  4. In another bowl, combine sugars, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  5. Gently fold dry ingredients into wet ingredients until just combined.
  6. Fill muffin liners halfway with batter, add a spoonful of cream cheese filling in the center, then top with more batter.
  7. Bake for 18–22 minutes or until a toothpick inserted into the muffin part comes out clean.
