  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a large bowl, combine melted butter and brown sugar. Add egg, vanilla extract, mashed bananas, and sour cream; mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually fold dry ingredients into wet ingredients while alternating with milk until just combined.
  5. Gently fold in 3/4 cup of chocolate chips and vegan marshmallow bits.
  6. Fill muffin liners with batter and top with remaining chocolate chips and marshmallows.
  7. Bake for 16 minutes or until golden brown. Allow to cool slightly before transferring to a wire rack.
