- 1 tsp baking soda
- 0.25 tsp salt
- 1 cup unsalted butter (softened)
- 3 large eggs
- 2 tsp vanilla extract
- 0.25 cups coconut oil or olive oil
- 0.25 cups fresh blackberry puree
- 1 cup buttermilk
- 2 cups fresh or frozen blackberries
- 0.25 cups granulated sugar (for topping)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp water
- 1 cup heavy cream (for ganache)
- 1.5 cups semi-sweet or dark chocolate (chopped)
- 1 tbsp unsalted butter (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large bowl, whisk together flour, granulated sugar, black cocoa powder, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Then stir in vanilla extract and coconut oil (or olive oil).
- Gradually mix in half of your dry ingredients into the wet mixture followed by buttermilk and blackberry puree. Alternate adding in more dry ingredients until everything is well combined but be careful not to overmix.
- Divide the batter evenly between your prepared pans and smooth out the tops with a spatula. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for about 10 minutes before transferring them onto wire racks to cool completely.
- While your cakes cool, heat heavy cream in a saucepan over medium heat until it starts to simmer gently. Remove from heat and pour over chopped chocolate in a bowl; let it sit for a few minutes before stirring until smooth. If desired, add unsalted butter for extra shine.
- In another small saucepan, combine blackberries with sugar, lemon juice, cornstarch, and water over medium heat until bubbling gently.
- Once cooled completely, place one layer on a serving plate. Spread some ganache on top followed by some blackberry topping before adding the second layer on top. Drizzle more ganache over the top so it cascades down sides.
