  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1 tbsp corn starch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • a pinch salt (for streusel)
  • a pinch cinnamon (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, corn starch, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients.
  5. Gently fold in blueberries and blueberry jam without overmixing.
  6. Prepare the streusel by combining butter, brown sugar, granulated sugar, flour, salt, and cinnamon until crumbly.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet and top with streusel.
  8. Bake for about 13 minutes or until edges are lightly golden. Cool on a wire rack before serving.
