  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/3 cups warm water (about 105°F/40°C)
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1 1/2 tsp sea salt
  • 1 pinch sugar (optional, to activate yeast)
  • Fresh rosemary sprigs
  • Minced garlic or garlic-infused olive oil
  • Cherry tomatoes
  • Olives
  • Fresh thyme, oregano, or basil
  • Grated Parmesan or crumbled feta cheese (or cheese alternatives)
  • Thinly sliced red onions, bell peppers, or zucchini

Instructions

  1. Activate the yeast by combining warm water with yeast and a pinch of sugar. Let sit for about 5-10 minutes until bubbly.
  2. In a large bowl, mix flour and sea salt. Add the activated yeast mixture along with olive oil. Combine until sticky dough forms.
  3. Cover and let rise in a warm area for about an hour until nearly doubled in size.
  4. Transfer dough onto an oiled baking sheet, stretching it into a rectangular shape about 1 inch thick. Create dimples across the surface.
  5. Drizzle with olive oil, sprinkle with sea salt, and add toppings of choice.
  6. Preheat oven to 450°F (230°C) and let focaccia rest for about 20 minutes before baking for 15-20 minutes until golden brown.
