  • 6 skinless boneless chicken thighs
  • 1 tablespoon garlic paste (or minced garlic)
  • 2 tablespoons olive oil
  • 1 small lemon (thinly sliced)
  • 1 small yellow onion (finely diced)
  • ¼ cup white grape juice
  • 1 cup chicken broth
  • 1 cup marinated olives
  • ½ teaspoon dried oregano
  • ½ teaspoon Italian Seasoning
  • Salt and fresh ground black pepper (to taste)

Instructions

  1. Marinate the chicken by mixing garlic paste, oregano, Italian seasoning, salt, and pepper in a bowl. Coat the chicken thighs thoroughly and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sear the marinated chicken for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. Sauté diced onions and minced garlic in the same skillet for about 3 minutes until softened.
  4. Add thinly sliced lemon and white grape juice to deglaze the pan, cooking for an additional 3 minutes.
  5. Pour in chicken broth and return the chicken to the skillet, simmering for about 5 minutes.
  6. Stir in marinated olives and continue to simmer for another 10 minutes until the sauce reduces slightly.
  7. Let rest for 5-7 minutes before serving over rice or with crusty bread.
