  • 8 ounces plant-based cream cheese, softened
  • 1 cup sugar, divided
  • 1 teaspoon vanilla extract
  • 1 quart fresh strawberries, sliced
  • 3 tablespoons cornstarch
  • 1 (3 ounce) package strawberry-flavored gelatin (plant-based)
  • 1 tablespoon lemon juice
  • 1 cup water

Instructions

  1. In a saucepan, mix together ½ cup sugar, cornstarch, gelatin, lemon juice, and water. Cook over medium heat until boiling and thickened; let cool slightly.
  2. Fold sliced strawberries into the cooled glaze until evenly coated.
  3. Tear angel food cake into 1-inch pieces and mix with 2 cups of non-dairy whipped topping. Press firmly into a baking dish as the base.
