  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup melted dark chocolate, cooled
  • 1 cup fresh strawberries, pureed
  • ¼ cup granulated sugar for strawberry swirl
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Combine chocolate cookie crumbs, melted butter, and sugar in a bowl; press into a springform pan.
  2. Bake crust for 10 minutes; cool while preparing filling.
  3. Beat softened cream cheese until smooth; gradually add sugar. Mix in eggs one at a time, followed by sour cream and vanilla extract.
  4. Fold in cooled melted dark chocolate until combined.
  5. Mix strawberry puree with sugar and lemon juice for the swirl.
  6. Layer half the chocolate filling over the crust, dollop with strawberry puree, then add remaining filling. Create swirls with a knife.
  7. Bake for 50-60 minutes until edges are set but center is slightly jiggly; cool gradually in the oven.
  8. Chill in the refrigerator for at least four hours before serving.
