  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups finely shredded carrots
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat eggs, sugars, vegetable oil, and vanilla until smooth. Combine mixtures and fold in shredded carrots (and nuts if desired). Pour into the prepared pan.
  3. For the cheesecake layer, beat softened cream cheese until smooth. Gradually add sugar and flour before mixing in vanilla and eggs one at a time. Stir in sour cream for richness and pour over the carrot cake layer.
  4. Bake for about 50–60 minutes until set but still slightly jiggly in the center. Cool gradually in the oven with door cracked to prevent cracks.
  5. Refrigerate for at least four hours before serving.
