- 800 g eggplant
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic, finely minced
- 1/2 small onion, very finely chopped
- 700 g tomato passata
- 1/4 cup water
- 1 tsp dried Italian herbs or oregano
- 1/2 tsp red pepper flakes (optional)
- 300 g spaghetti or other pasta
- 1/2 cup basil leaves, roughly chopped
Instructions
- Preheat your oven to 200°C (400°F).
- Toss eggplant cubes with olive oil, salt, and pepper in a baking dish. Roast for about 25-30 minutes until golden brown.
- In a large pan over medium heat, sauté minced garlic and finely chopped onion until soft.
- Add grape juice, tomato passata, water, dried herbs, salt, and pepper to the pan; let simmer for 15 minutes.
- Cook spaghetti according to package instructions until al dente; reserve some pasta water before draining.
- Toss spaghetti with the sauce and roasted eggplant; add reserved pasta water if needed.
- Serve topped with fresh basil and grated cheese if desired.
