  • 800 g eggplant
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic, finely minced
  • 1/2 small onion, very finely chopped
  • 700 g tomato passata
  • 1/4 cup water
  • 1 tsp dried Italian herbs or oregano
  • 1/2 tsp red pepper flakes (optional)
  • 300 g spaghetti or other pasta
  • 1/2 cup basil leaves, roughly chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss eggplant cubes with olive oil, salt, and pepper in a baking dish. Roast for about 25-30 minutes until golden brown.
  3. In a large pan over medium heat, sauté minced garlic and finely chopped onion until soft.
  4. Add grape juice, tomato passata, water, dried herbs, salt, and pepper to the pan; let simmer for 15 minutes.
  5. Cook spaghetti according to package instructions until al dente; reserve some pasta water before draining.
  6. Toss spaghetti with the sauce and roasted eggplant; add reserved pasta water if needed.
  7. Serve topped with fresh basil and grated cheese if desired.
