- 20 baby bell or cremini mushrooms
- 2 tablespoons butter
- 2 cloves garlic, minced
- 0.5 medium onion, finely diced
- 0.5 teaspoon kosher salt
- 0.25 teaspoon freshly ground black pepper
- 4 ounces cream cheese, softened
- 0.33 cup freshly grated parmesan cheese
- 0.33 cup whole pecans, roughly chopped
- 0.25 cup finely chopped fresh parsley (plus more for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and grease a baking sheet.
- Remove stems from mushrooms and finely chop them.
- In a skillet over medium heat, melt butter and sauté chopped mushroom stems, onion, garlic, salt, and pepper until soft.
- Combine the cooked mixture in a bowl with cream cheese, parmesan (reserve some), parsley, and pecans (reserve some). Mix well.
- Generously fill each mushroom cap with the mixture and top with reserved parmesan and pecans.
- Bake for 20-25 minutes until golden brown.
