  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
  • 2 tablespoons avocado oil (divided)
  • 2 pounds Brussels sprouts (trimmed and halved if large)
  • 1 cup milk of choice (dairy or non-dairy)
  • 23 garlic cloves (minced)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon cornstarch
  • ¼ cup shredded cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat one tablespoon of avocado oil in a large skillet over medium heat. Add chicken pieces and season with salt and pepper. Cook until golden brown.
  2. Add remaining avocado oil to the same skillet and sauté Brussels sprouts until browned.
  3. In a bowl, whisk together milk, garlic, lemon juice, salt, pepper, and cornstarch; pour over Brussels sprouts in the skillet.
  4. Once the sauce thickens and sprouts are tender, return cooked chicken to the pan. Stir in shredded cheese until melted.
  5. Remove from heat and garnish with parsley before serving.
