- ½ cup plus 2 tbsp granulated sugar

- 2 cups all-purpose flour
- 1 ½ teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 1 teaspoon baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 5 oz cream cheese (softened)
- 2 ½ tablespoon granulated sugar
- 1 teaspoon all-purpose flour
- ½ teaspoon pure vanilla extract
- 2 teaspoons whole milk
Instructions
- Prepare the cream cheese filling by mixing softened cream cheese, granulated sugar, flour, vanilla extract, and whole milk until smooth.
- In a large bowl, whisk together pumpkin puree, brown sugar, granulated sugar, eggs, sunflower oil, vanilla extract, and whole milk until well combined.
- In another bowl, whisk together all-purpose flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Preheat your oven to 350°F (175°C), line a muffin tin with liners, and fill each cup halfway with batter. Add a tablespoon of cream cheese filling on top and cover with more batter.
- Bake for about 18 minutes or until golden brown and a toothpick comes out clean.
