  • 8 oz linguine or spaghetti
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1/4 cup white grape juice (or chicken broth)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large pan over medium heat, add olive oil and sauté shrimp seasoned with salt and pepper for about 2 minutes per side until cooked through. Remove from the pan.
  3. In the same pan, melt butter, add garlic and optional red pepper flakes; sauté until fragrant (about 1 minute).
  4. Stir in white grape juice (or broth) and simmer until reduced by half (about 2 minutes).
  5. Add lemon zest and juice along with cooked pasta; toss well, adding reserved pasta water as needed for desired sauce consistency.
  6. Mix in Parmesan cheese, parsley, and cooked shrimp; stir to combine.
  7. Serve warm with additional Parmesan and lemon wedges if desired.
