  • 1 leek (sliced)
  • 4 tablespoons olive oil
  • 2 tablespoons grated parmesan cheese (optional)

  • 1/4 cup sliced red onion
  • 1/4 cup slivered almonds
  • 1 tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp sugar-free honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread chopped cabbage on a baking sheet; drizzle with 2 tbsp olive oil and season with salt, pepper, and parmesan cheese if desired. Bake for 20-25 minutes until crispy.
  3. On another baking sheet, arrange kale and leeks; drizzle with remaining olive oil and season. Bake for an additional 15-20 minutes until crispy.
  4. Toss the baked cabbage, kale, and leeks together in a bowl.
  5. Top with sliced red onion and slivered almonds.
  6. For the dressing, whisk together 1 tbsp olive oil, lemon juice, minced garlic, and sugar-free honey in a small bowl; drizzle over the salad before serving.
