  • 1 1/2 pounds boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1/2 cup soy sauce
  • 5 tbsp distilled white vinegar
  • 4 tsp minced garlic
  • 1/2 Medium Onion (Sliced)
  • 2 tbsp Swerve Brown Sugar Substitute
  • pinch Cayenne Pepper
  • Fresh Parsley for garnish

Instructions

  1. Heat olive oil in the Instant Pot using the sauté setting. Season chicken thighs with salt, pepper, and cayenne pepper. Brown on both sides for about 5 minutes.
  2. Turn off heat and add soy sauce, vinegar, sliced onion, Swerve brown sugar substitute, and minced garlic to the pot.
  3. Close the lid securely, set to 'sealing,' and cook on manual for 10 minutes.
  4. Perform a quick release of pressure. Switch back to sauté mode and let it simmer for another 15 minutes to reduce the sauce.
  5. Serve hot with freshly chopped parsley on top.
