  • 20 ounces Spinach (Raw)
  • 2 tsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 1/2 Onion (chopped)
  • 4 ounces Cream Cheese (softened)
  • 1/2 cup Parmesan Cheese (grated)
  • 1 pound Shredded Chicken
  • 2 tbsp Butter
  • 1/3 cup Beef Rind Crumbs (for topping)

Instructions

  1. Wilt the spinach in boiling water for 1-2 minutes; rinse under cold water.
  2. In a skillet, melt butter over medium heat and sauté chopped onion until softened.
  3. Add minced garlic; sauté for another minute. Mix in cream cheese until melted, then whisk in heavy whipping cream.
  4. Stir in half of the Parmesan cheese along with drained spinach and shredded chicken; season to taste.
  5. Spread mixture into a greased casserole dish. Combine remaining Parmesan and beef rind crumbs; sprinkle on top.
  6. Bake at 350°F for 20 minutes until golden and bubbly.
