  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces penne pasta (or any short pasta)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken pieces with 1 tablespoon of Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken until browned and cooked through (about 5-7 minutes). Remove from skillet.
