  • 8 oz fresh enoki mushrooms
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ¾ cup cold water
  • Vegetable oil (for frying)
  • ¼ cup mayonnaise
  • 12 teaspoons Thai red chili paste
  • 1 teaspoon fresh lemon juice
  • ½¾ teaspoon table salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Prepare the chili aioli by mixing mayonnaise, Thai red chili paste, lemon juice, minced garlic, and salt in a bowl until smooth. Adjust water for desired consistency.
  2. In another bowl, combine flour, cornstarch, salt, garlic powder, paprika, and black pepper. Gradually add cold water to create a smooth batter.
  3. Coat enoki mushroom clusters in the batter until fully covered.
  4. Heat vegetable oil in a deep skillet to about 350°F (175°C). Fry coated mushrooms in batches for 3-4 minutes or until golden brown. Drain on paper towels.
  5. Serve warm with chili aioli dip.
