- 8 oz fresh enoki mushrooms
- ½ cup all-purpose flour
- ¼ cup cornstarch
- ¾ cup cold water
- Vegetable oil (for frying)
- ¼ cup mayonnaise
- 1–2 teaspoons Thai red chili paste
- 1 teaspoon fresh lemon juice
- ½ – ¾ teaspoon table salt
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon freshly ground black pepper
Instructions
- Prepare the chili aioli by mixing mayonnaise, Thai red chili paste, lemon juice, minced garlic, and salt in a bowl until smooth. Adjust water for desired consistency.
- In another bowl, combine flour, cornstarch, salt, garlic powder, paprika, and black pepper. Gradually add cold water to create a smooth batter.
- Coat enoki mushroom clusters in the batter until fully covered.
- Heat vegetable oil in a deep skillet to about 350°F (175°C). Fry coated mushrooms in batches for 3-4 minutes or until golden brown. Drain on paper towels.
