  • 2 cups chicken broth
  • 1.5 lbs boneless skinless chicken breast or thighs
  • 1 tablespoon olive oil
  • 1 medium onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 packet (or 2 tablespoons) fajita seasoning
  • 1 cup shredded cheddar or Mexican blend cheese

Instructions

  1. Cook rice according to package instructions using chicken broth instead of water. Set aside.
  2. In a large skillet over medium heat, add olive oil and sauté sliced onions until translucent. Add bell peppers and cook until tender.
  3. Stir in bite-sized chicken pieces and fajita seasoning; cook until chicken is fully cooked.
  4. In a large bowl, combine cooked rice with the sautéed mixture; mix well.
