Ingredients
- 6 bell peppers (assorted colors)
- 2 pounds sirloin steak (thinly sliced)
- 1 large white onion (thinly sliced)
- 8 ounces cremini mushrooms (sliced)
- 9 slices provolone cheese
- 3 tablespoons olive oil
- Fresh thyme leaves (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off bell peppers and remove seeds.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté onions and mushrooms until golden brown.
- Add the thinly sliced sirloin steak to the skillet. Season with half of the salt and pepper; cook until browned.
- Fill each bell pepper with the steak mixture and top with provolone cheese. Place in a baking dish, drizzle with remaining olive oil, and sprinkle with leftover salt and pepper.
