  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon
  • 8 large romaine or butter lettuce leaves

Instructions

  1. 1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. In a bowl, mix the rinsed chickpeas with olive oil, garlic powder, smoked paprika, salt, and black pepper until well coated.
  3. 3. Spread the seasoned chickpeas evenly on the baking sheet and roast for 20-25 minutes until crispy, shaking halfway through.
  4. 4. While the chickpeas roast, prepare the lettuce leaves on a platter.
  5. 5. Once the chickpeas are done and slightly cooled, fill each lettuce leaf with the roasted chickpeas and drizzle fresh lemon juice over the top.
