- 1 can (15 oz) chickpeas, rinsed and drained
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- Juice of ½ lemon
- 8 large romaine or butter lettuce leaves
Instructions
- 1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. In a bowl, mix the rinsed chickpeas with olive oil, garlic powder, smoked paprika, salt, and black pepper until well coated.
- 3. Spread the seasoned chickpeas evenly on the baking sheet and roast for 20-25 minutes until crispy, shaking halfway through.
- 4. While the chickpeas roast, prepare the lettuce leaves on a platter.
- 5. Once the chickpeas are done and slightly cooled, fill each lettuce leaf with the roasted chickpeas and drizzle fresh lemon juice over the top.
