  • 1 1/2 cups Almond Flour
  • 5 tbsp Melted Butter
  • 3 tbsp Swerve Brown Sugar Substitute
  • 16 ounces Cream Cheese (softened)
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/3 cup Keto White Chocolate Chips (plus additional for topping)
  • 1/2 cup Chopped Pecans (plus additional for topping)
  • 2 tbsp Sugar-Free Caramel Topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix almond flour, melted butter, and Swerve brown sugar substitute until combined.
  3. Press the mixture into the bottom of a greased 9×9 baking dish and bake for 10 minutes. Let cool.
  4. In another bowl, blend softened cream cheese, pumpkin puree, Swerve confectioner's sugar substitute, and vanilla until smooth.
  5. Fold in keto white chocolate chips and chopped pecans.
  6. Spread the filling over the cooled crust evenly.
  7. Place the dish in a larger dish filled with water (water bath) and bake for 25 minutes.
  8. Remove from oven, cool slightly, garnish with pecans and white chocolate chips, then chill for at least 2 hours before serving.
  9. Drizzle with sugar-free caramel sauce just before serving.
