  • 2 large boneless skinless chicken breasts (cut in half lengthwise)
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper (to taste)
  • 1 1/2 cups fresh cranberries
  • 1/4 cup water
  • 1/4 cup Swerve confectioner’s sugar substitute
  • 2 sprigs thyme (for garnish)
  • 1/4 cup sugar-free maple syrup

Instructions

  5. Sear the chicken in the skillet for about 6-8 minutes on each side until cooked through.
  6. Stir sugar-free maple syrup into cooled cranberry sauce and drizzle over chicken before serving.
