- 1 1/2 tbsp Olive oil, divided
- 1/2 cup Onion, diced
- 1 Red pepper, diced
- 1/2 cup Celery, sliced
- 1 clove Garlic, minced
- 1 lb Grass-fed lean ground beef
- 1 tbsp Chili powder
- 1 tbsp Smoked paprika
- 1/4 tsp Cayenne pepper
- 1 14oz Can fire-roasted diced tomatoes
- 1 14oz Can crushed tomatoes
- 1/2 cup Beef broth
- Pinch of Sea salt
- 2 Bay leaves
- 1/2 cup Parsley, chopped (save for the end)
Instructions
- Heat 1 tablespoon of olive oil in an Instant Pot on sauté mode. Add diced onion, red pepper, celery, and minced garlic; sauté for 3–4 minutes until softened.
- Add remaining oil and ground beef; cook until browned (about 3–4 minutes). Drain excess fat.
- Stir in chili powder, smoked paprika, and cayenne pepper; cook for another 3–4 minutes until well combined.
- Add fire-roasted diced tomatoes, crushed tomatoes, beef broth, sea salt, and bay leaves. Mix well and secure lid; set to manual high pressure for 10 minutes.
- Allow natural steam release before carefully opening the lid.
- Set to sauté mode again and cook for an additional 3–4 minutes to thicken.
- Stir in chopped parsley just before serving.
