  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • 3 cloves garlic
  • 1 medium onion
  • 1 teaspoon cumin
  • 1½ teaspoons coriander powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon sesame seeds
  • Salt and pepper (to taste)
  • Oil for frying
  • ½ cup tahini paste
  • ¼ cup water (plus 23 tablespoons for thinner sauce)
  • 1 lemon (about ¼ cup)
  • 2 garlic cloves (minced)

Instructions

  1. Soak the chickpeas in water overnight for at least 12 hours. Drain and rinse.
  2. In a food processor, combine soaked chickpeas, parsley, cilantro, onion, and garlic; pulse until textured but not pureed.
  3. Mix in cumin, coriander powder, baking soda, baking powder, sesame seeds, salt, and pepper until well combined.
  4. Heat oil in a deep skillet over medium heat. Form the mixture into small balls or patties.
  5. Fry falafel in batches for about 2-3 minutes on each side until golden brown. Drain on paper towels.
  6. For the tahini sauce, combine tahini paste, water, lemon juice, minced garlic, and salt in a bowl until smooth.
