Ingredients

  • 1 lb chicken breasts
  • 1/2 cup Greek dressing
  • 2 bags Success Boil-in-Bag White Rice (or 2 heaping cups cooked white rice)
  • 1 can chickpeas (15.5 oz), drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup grape tomatoes, quartered
  • 1/4 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki
  • 1/4 cup hummus

Instructions

  1. Marinate chicken in Greek dressing for at least 1 hour (overnight preferred).
  2. Cook Success Boil-in-Bag White Rice according to package instructions; set aside.
  3. Air fry chicken at 400°F for 12-15 minutes or bake at 400°F for about 20 minutes until cooked through.
  4. Assemble bowls starting with rice, then layer on chicken, chickpeas, cucumber, tomatoes, red onion, tzatziki, hummus, and feta cheese.
  5. Serve warm and enjoy.
