  • 1 medium head cauliflower (or 4 cups riced cauliflower)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh basil or parsley (chopped)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the cauliflower into florets and steam until tender.
  2. Allow it to cool slightly, then rice the cauliflower using a food processor until it resembles fine grains.
  3. Squeeze out excess moisture from the riced cauliflower using a clean kitchen towel.
  4. In a mixing bowl, combine riced cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, black pepper, fresh herbs, and red pepper flakes. Mix until well combined.
  5. Spread the mixture onto a lined baking sheet in a round shape about ½ inch thick.
  6. Bake for 25-30 minutes or until golden brown and crispy around the edges.
  7. Let cool slightly before adding your favorite toppings and return to the oven for about 10 minutes.
