- 8 oz linguine or spaghetti
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium-high heat, heat 1 tbsp olive oil and 1 tbsp butter. Add shrimp seasoned with salt and pepper; cook for about 2 minutes on each side until pink. Remove shrimp from skillet.
- In the same skillet, add remaining olive oil and butter. Sauté garlic and optional red pepper flakes for about 30 seconds.
- Add cherry tomatoes and sun-dried tomatoes; cook for about 2 minutes until softened.
- Stir in fresh spinach; cook until wilted (about 1-2 minutes).
- Pour in reserved pasta water and stir well. If using heavy cream, add it now for extra richness.
- Return shrimp to the skillet along with the drained pasta; toss to combine.
- Garnish with grated Parmesan cheese and fresh parsley before serving.
