  • 6 medium carrots (peeled, about 10 ounces)
  • 1 large head broccoli (cut into florets, about 3 cups)
  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • Optional: 3 tablespoons finely grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large rimmed baking sheet with non-stick spray.
  2. Slice thick carrots in half lengthwise, then cut diagonally into 1½-inch pieces. Arrange the carrots on the baking sheet along with broccoli florets.
  3. In a small bowl, mix Italian seasoning, salt, garlic powder, onion powder, and black pepper. Drizzle olive oil over the veggies and sprinkle the spice blend on top; toss to coat evenly.
  4. Roast in the oven for about 20 minutes or until browned and tender, tossing halfway through cooking time. If desired, sprinkle with Parmesan cheese before serving hot.
