  • ½ cup plant-based butter (melted)
  • ½ cup coconut sugar
  • ¼ cup real maple syrup
  • ¼ cup peppermint mocha cold brew latte
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon peppermint extract
  • ¾ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup cocoa powder
  • ⅛ teaspoon xanthan gum
  • 1 cup gluten-free flour
  • ¼ cup dairy-free chocolate chips
  • Crushed candy canes for topping

Instructions

  1. Prepare your flax eggs by mixing ground flax with water in two small bowls; let sit for at least five minutes.
  2. Preheat your oven to 350°F and line an 8×8 or 9×9 baking dish with parchment paper.
  3. In a large bowl, whisk together melted plant-based butter, coconut sugar, maple syrup, and prepared flax eggs. Add peppermint mocha cold brew, vanilla extract, and peppermint extract; mix until well combined.
  4. Stir in baking powder, kosher salt, cocoa powder, gluten-free flour, and xanthan gum until fully incorporated. Fold in dairy-free chocolate chips.
  5. Pour the batter into the prepared pan and bake for about 18-22 minutes or until set but fudgy.
  6. Allow cooling for about 15 minutes before lifting out using parchment paper flaps. Sprinkle with crushed candy canes before cutting into squares.
