  • 1/2 Onion (chopped)
  • 1/2 Red Bell Pepper (chopped)
  • 1/2 Green Bell Pepper (chopped)
  • 2 tsp Minced Garlic
  • 2 tsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Paprika
  • Cayenne Pepper (to taste)
  • 1 1/2 cups Cauliflower Rice
  • 1/2 cup Rotel (drained)
  • 1 cup Fiesta Blend Shredded Cheese
  • Salt and Pepper (to taste)
  • 5 Zero Carb Street Taco Tortillas (cut into strips)

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef along with onions and bell peppers until browned and vegetables are tender. Drain excess fat.
  2. Reduce heat to medium, then add minced garlic, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Sauté for one minute to enhance flavors.
  3. Stir in cauliflower rice and Rotel; cook for two minutes until well combined.
  4. Gently fold in tortilla strips.
  5. Sprinkle cheese on top, turn off the heat, cover briefly to allow melting before serving.
