- 1 sweet onion (chopped)
- 1 orange bell pepper (chopped)
- 1 pound shrimp (raw; peeled and deveined)
- 1 lime (juice and zest)
- 1–2 garlic cloves (minced)
- 1 tablespoon taco seasoning
- 1 cup mozzarella cheese (shredded)
- ¼ cup fresh parsley (finely chopped)
- 4 flour tortillas
Instructions
- Heat 1 teaspoon of olive oil in a medium frying pan over medium heat. Add chopped onion and orange bell pepper; sauté for 3 to 4 minutes until softened.
