Ingredients

  • 2 cups cubed cooked chicken
  • 4 cups romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced almonds
  • 4 Natural Delights® pitted medjool dates (2 chopped for salad, 2 for dressing)
  • 2 green onions, chopped
  • 3 tbsp coconut aminos
  • 3 tbsp rice vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp toasted sesame oil
  • 1 garlic clove, peeled
  • 1/2 inch ginger, peeled
  • 1/2 tsp ground black pepper
  • 1/4 tsp sea salt

Instructions

  1. In a blender, combine the two chopped dates, coconut aminos, rice vinegar, olive oil, toasted sesame oil, garlic clove, ginger, black pepper, and sea salt. Blend until smooth to create the dressing.
  2. In a large bowl, mix the cubed chicken, romaine lettuce, red cabbage, carrots, sliced almonds, and green onions. Toss gently to combine.
  3. Pour the dressing over the salad mixture and toss until everything is well-coated.
  4. Serve immediately or chill in the refrigerator for about 30 minutes before serving for enhanced flavor.
