- 2 cups cubed cooked chicken
- 4 cups romaine lettuce
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/2 cup sliced almonds
- 4 Natural Delights® pitted medjool dates (2 chopped for salad, 2 for dressing)
- 2 green onions, chopped
- 3 tbsp coconut aminos
- 3 tbsp rice vinegar
- 2 tbsp extra virgin olive oil
- 1 tbsp toasted sesame oil
- 1 garlic clove, peeled
- 1/2 inch ginger, peeled
- 1/2 tsp ground black pepper
- 1/4 tsp sea salt
Instructions
- In a blender, combine the two chopped dates, coconut aminos, rice vinegar, olive oil, toasted sesame oil, garlic clove, ginger, black pepper, and sea salt. Blend until smooth to create the dressing.
- In a large bowl, mix the cubed chicken, romaine lettuce, red cabbage, carrots, sliced almonds, and green onions. Toss gently to combine.
- Pour the dressing over the salad mixture and toss until everything is well-coated.
- Serve immediately or chill in the refrigerator for about 30 minutes before serving for enhanced flavor.
