Ingredients
- 64 oz chicken stock
- 4 bone-in chicken breasts (skin-on)
- 1 sweet yellow onion (chopped)
- 1 bay leaf
- 1 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 3–4 sprigs fresh thyme
- 1 head garlic (cut off the top)
- 3 medium carrots (sliced)
- 4 celery stalks (sliced)
- Your favorite noodles
Instructions
- Combine chicken stock, chicken breasts, chopped onion, bay leaf, salt, pepper, thyme sprigs, and garlic in the slow cooker.
- Cook on LOW for 8 hours or HIGH for 4 hours.
- About an hour before serving (if on HIGH) or two hours before (if on LOW), shred cooked chicken and return it to the pot along with sliced carrots and celery.
- Cook your noodles separately according to package instructions until al dente.
