  • 64 oz chicken stock
  • 4 bone-in chicken breasts (skin-on)
  • 1 sweet yellow onion (chopped)
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 34 sprigs fresh thyme
  • 1 head garlic (cut off the top)
  • 3 medium carrots (sliced)
  • 4 celery stalks (sliced)
  • Your favorite noodles

Instructions

  1. Combine chicken stock, chicken breasts, chopped onion, bay leaf, salt, pepper, thyme sprigs, and garlic in the slow cooker.
  2. Cook on LOW for 8 hours or HIGH for 4 hours.
  3. About an hour before serving (if on HIGH) or two hours before (if on LOW), shred cooked chicken and return it to the pot along with sliced carrots and celery.
  4. Cook your noodles separately according to package instructions until al dente.
  5. Adjust seasoning before serving and enjoy!
