- 2 bay leaves
- 1 lb fresh or frozen turkey or beef meatballs
- 1 cup dry orzo pasta
- ¼ cup chopped Italian parsley
- ¼ cup chopped basil
Instructions
- In a large pot, heat olive oil over medium heat and sauté onions, carrots, and garlic until softened (about 5-7 minutes).
- Add chicken broth, fire-roasted tomatoes, oregano, basil, bay leaves, and meatballs; bring to a boil.
- Stir in the dry orzo pasta, reduce heat to medium-low, cover, and simmer for about 12 minutes until orzo is al dente.
- Remove bay leaves and stir in parsley and basil; season with salt and pepper to taste.
