- 1 1/2 cups Almond Flour
- 2 ounces Cream Cheese (softened)
- 3 tbsp Butter (softened)
- 4 large Eggs
- 1 tsp Apple Cider Vinegar
- 1/2 tsp Italian Seasoning
- 1/4 tsp Garlic Powder
- 1 tbsp Olive Oil
- 1/2 Onion (chopped)
- 2 tsp Minced Garlic
- 4 cups Fresh Spinach
- 1/2 cup Feta Cheese (crumbled)
- 2/3 cup Heavy Whipping Cream
- Salt and Pepper (to taste)
- 1/2 cup Shredded Mozzarella Cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together 4 large eggs and 2/3 cup heavy whipping cream; season with salt and pepper.
- Blend 1 1/2 cups almond flour, 2 ounces softened cream cheese, 3 tbsp softened butter, 1 egg, 1 tsp apple cider vinegar, 1/2 tsp Italian seasoning, and 1/4 tsp garlic powder until smooth. Press into a greased quiche pan.
- Sauté 1/2 chopped onion in 1 tbsp olive oil until soft; add 2 tsp minced garlic and sauté for another 30 seconds.
- Stir in 4 cups fresh spinach until wilted; let cool slightly.
- Spread the spinach mixture over the crust and sprinkle with 1/2 cup crumbled feta cheese.
- Pour the egg mixture over the top; cover loosely with foil and bake for 20 minutes.
- Lower temperature to 350°F (175°C), remove foil, sprinkle with 1/2 cup shredded mozzarella cheese, and bake for an additional 20-25 minutes until golden brown.
