  • 1 1/2 cups Almond Flour
  • 2 ounces Cream Cheese (softened)
  • 3 tbsp Butter (softened)
  • 4 large Eggs
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Garlic Powder
  • 1 tbsp Olive Oil
  • 1/2 Onion (chopped)
  • 2 tsp Minced Garlic
  • 4 cups Fresh Spinach
  • 1/2 cup Feta Cheese (crumbled)
  • 2/3 cup Heavy Whipping Cream
  • Salt and Pepper (to taste)
  • 1/2 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together 4 large eggs and 2/3 cup heavy whipping cream; season with salt and pepper.
  3. Blend 1 1/2 cups almond flour, 2 ounces softened cream cheese, 3 tbsp softened butter, 1 egg, 1 tsp apple cider vinegar, 1/2 tsp Italian seasoning, and 1/4 tsp garlic powder until smooth. Press into a greased quiche pan.
  4. Sauté 1/2 chopped onion in 1 tbsp olive oil until soft; add 2 tsp minced garlic and sauté for another 30 seconds.
  5. Stir in 4 cups fresh spinach until wilted; let cool slightly.
  6. Spread the spinach mixture over the crust and sprinkle with 1/2 cup crumbled feta cheese.
  7. Pour the egg mixture over the top; cover loosely with foil and bake for 20 minutes.
  8. Lower temperature to 350°F (175°C), remove foil, sprinkle with 1/2 cup shredded mozzarella cheese, and bake for an additional 20-25 minutes until golden brown.
