- 1 tablespoon olive oil
- 1.5 pounds boneless skinless chicken thighs (cut into 1 inch pieces)

- 2 cups chicken broth
- 0.5 cup dry white grape juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon balsamic vinegar
- 2 teaspoons chopped fresh rosemary
- 2 teaspoons chopped fresh thyme
- 0.5 teaspoon dried oregano
- 1 teaspoon salt (plus more to taste)
- 6 garlic cloves (finely minced)
- 1 large yellow onion (cut into chunks)
- 3 large carrots (peeled and cut into 1/2-inch diagonal slices)
- 1 pound Yukon gold potatoes (diced into ½ inch cubes)
- 0.25 cup all-purpose flour
- 0.5 cup unsweetened almond milk
- 0.67 cup frozen peas
Instructions
- Heat olive oil in a skillet over high heat. Season chicken with salt and pepper and brown for 5-6 minutes. Transfer to slow cooker.
- In the slow cooker, combine chicken broth, white grape juice, Worcestershire sauce, balsamic vinegar, herbs, salt, and pepper.
- Add garlic, onion, carrots, and diced potatoes. Cover and cook on low for 7-8 hours or high for 4-5 hours.
- For thickening, remove ½ cup broth from the cooker; whisk in almond milk and flour until smooth. Return to the slow cooker and stir.
- Stir in frozen peas and cook uncovered on high for an additional 15-20 minutes until thickened.
