  • 2 cans diced tomatoes (14.5 oz each)
  • 1 can tomato sauce (15 oz)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1/2 cup uncooked long-grain white rice
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent.
  3. Stir in chopped cabbage, diced tomatoes, tomato sauce, and tomato paste until well combined.
  4. Add uncooked rice, beef broth, bay leaves, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat to low, cover the pot, and let simmer for about 25-30 minutes until rice and cabbage are tender.
  6. Remove bay leaves before serving; garnish with fresh parsley.
