Ingredients

Scale
  • 6 tablespoons salted butter
  • 4 medium yellow onions (thinly sliced)
  • 1/2 cup dry white grape juice
  • Black pepper (to taste)
  • 2 shallots (sliced)
  • 4 cloves garlic (chopped)
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons chopped fresh sage
  • Chili flakes (to taste)
  • 68 cups low sodium chicken broth
  • 1/2 cup tamari or soy sauce (low sodium is best)
  • 4 pounds bone-in beef short ribs
  • 2 bay leaves
  • 2 cups baby carrots
  • 6 slices French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and shallots. Sauté until caramelized and golden brown, about 30-40 minutes.
  2. Pour in the dry white grape juice, scraping any bits from the bottom. Let it simmer briefly.
  3. Stir in garlic, thyme, sage, and chili flakes; cook for an additional 2-3 minutes.
  4. Add chicken broth, tamari or soy sauce, beef short ribs, bay leaves, and baby carrots. Bring to a boil, then reduce heat and simmer for about 2-3 hours until beef is tender.
  5. Remove short ribs; shred the meat and return it to the pot. Serve hot in bowls topped with toasted French bread and melted Gruyère cheese.
