  • 1 pound Boneless Skinless Chicken Breasts
  • 1 Red Bell Pepper (chopped)
  • 1/2 Onion (chopped)
  • 3 tsp Greek Seasoning
  • 1 tsp Oregano
  • 2 tsp Minced Garlic
  • Juice from 1/2 a Lemon
  • 1 Zucchini (chopped)
  • 2 Roma Tomatoes (chopped)
  • 3 ounces Cream Cheese (softened)
  • 4 cups Chicken Broth
  • 1/4 cup Feta Cheese
  • 1/4 cup Greek Olives

Instructions

  1. Place the chicken breasts in a crockpot and season with Greek seasoning and oregano.
  2. Add chopped onions, bell peppers, zucchini, tomatoes, minced garlic, and cream cheese.
  3. Pour lemon juice and chicken broth over the mixture.
  4. Cover and cook on high for about 3 hours until the chicken is fully cooked.
  5. Remove the chicken, shred it with two forks, and return to the crockpot.
  6. Stir well to combine all ingredients.
  7. Garnish with crumbled feta cheese and sliced Greek olives before serving.
