  • 2 tbsp olive oil
  • 1.5 lb boneless skinless chicken breast
  • 1 onion
  • 34 cloves garlic
  • 3 medium carrots
  • 23 stalks celery
  • 12 oz cremini mushrooms
  • 4 1/2 cups chicken stock
  • 1/3 cup coconut cream
  • 1/4 cup gluten-free flour

Instructions

  1. Season diced chicken with salt and pepper.
  2. Heat 1 tbsp olive oil in a pot over medium heat; sauté chicken until golden brown (about 2-3 minutes), then remove.
  3. In the same pot, add remaining oil, onions, garlic, carrots, and celery; sauté for 5 minutes.
  4. Stir in mushrooms; cook for an additional couple of minutes.
  5. Whisk gluten-free flour with some broth in a bowl to create a slurry.
  6. Return chicken to the pot along with herb sprigs, coconut cream, broth, and slurry; bring to a boil.
  7. Reduce heat; simmer for about 30 minutes while stirring occasionally.
  8. Remove herb sprigs; adjust seasonings before serving hot.
