- 7 oz Dried Pasta (gluten-free corn macaroni or whole wheat)
- 1 Tbsp Olive Oil
- 1 Sweet Onion (diced)
- 1 Red Bell Pepper (chopped)
- 3 Cups Chopped Button Mushrooms
- 1 Can Black Beans (15 oz, rinsed and drained)
- 1 Can Red Kidney Beans (15 oz, rinsed and drained)
- 1 Cup Frozen Corn
- 1 Can Tomato Paste (15 oz)
- 1 Can Diced Tomatoes (8 oz)
- Spices: Smoked Paprika, Chili Powder, Ground Cumin, Dried Oregano
- 2 Cups Broth of choice
- Sea salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced onion, chopped bell pepper, and mushrooms. Sauté for 5-7 minutes until tender.
- Stir in black beans, red kidney beans, frozen corn, diced tomatoes, tomato paste, smoked paprika, chili powder, ground cumin, oregano, salt, and pepper.
- Add dried pasta and broth to the skillet. Bring to a boil then reduce heat. Simmer for about 8-10 minutes until pasta is cooked through.
