  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup cooked brown rice
  • 1/2 cup black beans (rinsed and drained)
  • 1/2 cup corn kernels
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 avocado (sliced)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream or Greek yogurt
  • 1 lime (cut into wedges)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
  3. Rub the seasoning onto the chicken breasts evenly.
  4. Heat olive oil in a skillet over medium-high heat; sear the chicken for about 2-3 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until fully cooked. Allow it to rest for 5 minutes before slicing.
  6. In serving bowls, add a base of cooked brown rice, then layer with black beans, corn, cherry tomatoes, red onion, and avocado.
  7. Top with sliced chicken and sprinkle with shredded cheese and cilantro.
  8. Drizzle with sour cream or Greek yogurt and serve with lime wedges.
