  • 2 Tablespoons Califia Farms Unsweetened Almondmilk (or Califia Farms BetterHalf Unsweetened Creamer)
  • 1 sweet potato (cubed)
  • Salt (to taste)
  • Avocado oil (for drizzling)
  • 3 cups fresh kale (removed from stem and roughly chopped)
  • Juice of 1 lemon
  • 1 apple (cubed)
  • 1 avocado (cubed)
  • 1 cup blueberries
  • 1 tablespoon red onion (diced)
  • 1/2 cup slivered almonds

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with avocado oil and salt, then roast for about 15 minutes until tender.
  2. In a large bowl, combine chopped kale with lemon juice and a pinch of salt. Massage the kale for about 2-3 minutes until tender.
