  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter (melted)
  • 1 cup mini vegan marshmallows
  • 1/2 cup graham cracker crumbs
  • 1/2 cup semi-sweet mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, mix the eggs, milk, and melted butter; then combine this mixture with the dry ingredients until just mixed.
  4. Gently fold in half of the mini vegan marshmallows and the semi-sweet chocolate chips.
  5. Fill each cupcake liner two-thirds full with batter and bake for about 18–20 minutes or until a toothpick comes out clean.
  6. Allow the cupcakes to cool completely before frosting with vegan marshmallow frosting and sprinkling graham cracker crumbs on top.
