  • 1 tablespoon sun-dried tomato oil
  • 1 ½ cups chopped yellow onion
  • 4 cloves garlic (minced)
  • 3 tablespoons tomato paste
  • 64 ounces chicken broth
  • 1 cup heavy whipping cream
  • 4 teaspoons fresh basil (plus more for garnish)
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ teaspoon crushed red pepper (plus more for garnish)
  • 8 ounces uncooked medium shell pasta
  • 3 cups fresh baby spinach (chopped)
  • 2 cups rotisserie chicken (shredded)
  • 8 ounces cream cheese (cubed)
  • 1 ½ ounces Parmesan cheese (grated)

Instructions

  1. Heat half the oil from the sun-dried tomatoes in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and tomato paste; cook for another minute.
  3. Add chicken broth, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a gentle boil.
  4. Reduce heat and stir in heavy cream and uncooked pasta. Cook until pasta is al dente (10-12 minutes).
  5. Fold in spinach, shredded chicken, cream cheese, and Parmesan until well blended.
  6. Serve hot, garnished with additional basil and Parmesan if desired.
